		<description>I&#039;m certainly an advocate of raw food, but I do have to comment on one statement you&#039;ve made -- it is absolutely untrue that raw foods are &quot;easier to digest.&quot;  That cooking makes food MORE digestible is its single most notable effect.  The literature demonstrates clearly that starches and proteins are made more available to the human body through heat processing.

That&#039;s not to say, of course, that cooking might have undesirable effects, such as breaking down antioxidants (also abundantly demonstrated in the literature).  But please keep things balanced and don&#039;t misrepresent the raw diet.</description>
